Mother’s Day Homemade Chocolates

 

Mother’s Day is coming soon.  Sunday, May 8th.

Most women love chocolate, so I thought I’d share my own favorite confection in the hope that it would make some mothers happy on their special day.  Although these are high in calories, there are no additives and the ingredients are wholesome.

I’ve learned some things about making candy.  I’ve learned that ice cube trays can be used for candy molds.  Just to make sure the candies will release from the ice cube tray I smear each compartment with a little butter.  This may not be necessary.  I haven’t tried without butter, but I’m guessing that if you have silicone ice cube trays or molds the candies will release easily.  To make homemade chocolates, melt bittersweet chocolate chips and/or semi-sweet chips in the microwave with a little olive oil or coconut oil.  Heat in short intervals, stir and repeat till chocolate is melted.  Spoon a small amount of melted chocolate into the bottom of each compartment.  I found out that when making chocolates, it’s a good idea to put only a thin layer of melted chocolate in the bottom of each compartment.  When I got too generous with the chocolate, once the candies were refrigerated, the chocolate was too thick and hard to bite.  Next, I put in my filling which I have formed into a shape that fits the compartment.  I’ve used peanut butter creme with whole peanuts.  Recipe below.  Then I spoon a thin layer of melted chocolate over the filling to cover.  Refrigerate.

Note that a little olive oil or coconut oil added to the chocolate makes a better end product.
